I just installed a brand new 64-bit Server 2003 Standard Edition on a brand new Dell Poweredge 2900 with dual XEON Quad Core's, 4 GB of RAM, 1.5 TB on a SATA RAID 5. I set up my domain like I've done a hundred times before, and then installed Exchange 2007 x64 SP1 for my first time. I got everything up and running, and everything looks great, but after the server's been up for about a day, my users complain of sluggish performance in Outlook 07. I'm seeing it as well. It's only slow when doing things like deleting items, and opening e-mails, or switching between Contacts/Calendar/Inbox. It takes 15-30 seconds to refresh. All Outlook is using Cached mode, so I'm suprised by this. Outlook hangs up so bad that if you try to click anywhere else, Outlook completely locks up, and says, "Not Responding" until it's done doing whatever it's doing. While this is going on, my server's CPU goes through the roof. I'm amazed because this server is extremely overpowered for my enviroment. I've got 10 users who only send text e-mails occassionally throughout the day.

Any suggestions on where to start looking? I've looked through my event logs, and they are crystal clean.
